What I love is its effortlessness; it is not trying to be champagne — it is trying to be itself, which is a crystalline, mineral driven sparkling with gravitas. I think a perfect pairing for sushi or simple, fish dishes or as an aperitif.  Delicate effervescence, with a small to medium sized bead. In the nose: vanilla, raw almond, honeydew, green apple.  Moderate acidity. Rich mousse. A long vanilla, green apple, raw almond, and brioche finish — rich, warming yeasty notes flare just as the minerality starts to diminish. Really delightful, round drinking experience. Evolves across the palate and as it warms in the glass. 9.5/10.”

Lauren says, “Gold with an orange tinted rim. Tiny bubbles. Aroma of pear and almond. High acidity. Very crisp. Flavor of Granny Smith apple, saline, wet stone. Finish has a slight yeasty quality. 9/10.”
